  • 1/4 teaspoon baking powder (optional, for fluffier fritters)
  • Vegetable oil (for frying)

Instructions:

  1. Prepare Zucchini: Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. Afterward, squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.

  2. Mix Ingredients: In a large bowl, combine the drained zucchini, flour, Parmesan cheese (if using), eggs, chopped herbs (if using), onion, garlic, black pepper, and baking powder (if using). Mix until everything is well combined.

  3. Heat Oil: Heat a few tablespoons of vegetable oil in a large skillet over medium heat.
